Hailing from the famous Finca Paraiso, Yenni has long been involved in the experimentation and ground breaking processing that the Colombian farm is so famous for.
Her Pink Bourbon lot has benefitted from a staggeringly exact level of processing to achieve the optimum flavour profile - washed with ozonated water, anaerobically fermented for forty eight hours, pulped, fermented again for two days at an exact 21˚C, and then thermal shocked twice at different temperatures to fix aromas, followed by controlled drying over three days - the results in the cup are truly unbelievable.
