Mandela Controlled Ferment Natural
Another winner from CGLE. A tropical, full-flavoured natural using a unique Mandela cultivar.
In the Valle del Cauca of western Colombia we return to the trailblazing producers of Cafe Granja La Esperanza, with this controlled-ferment natural of their experimental Mandela cultivar crop.
Having gone through multiple crosses from varieties such as Caturra, Sudan Rume and Villa Sarchi, the resulting plants were then stabilised for growth and harvest. Developed by the team at CENICAF, the Colombian Coffee Research Centre, the cherries of this incredible lot are stored in a silo for 48 hours at approximately 35°C, before solar drying for a further 15 days.
This closely monitored ferment-process lends a complex and boozy characteristic to the sweet tropical fruit notes found in the cup.
Whole bean orders are roasted on Mondays and Thursdays. Orders placed before 9am are entered into the roasting queue for that day.
