La Osa Anaerobic

Mixed varietal anaerobic processing from four outstanding female producers.

In our Discovery genre we enjoy exploring the unusual side of specialty coffee, and with La Osa from San Ignacio, Peru, we may have reached the pinnacle. Named after a bear that frequents the area called El Chaupe, this helpful beast aids pollination of plants by carrying pollen on it’s fur, as well as opening up canopy spaces for light to germinate growth in the lower forest.

This anaerobic honey-processed lot of mixed cultivar is provided by four female farm owners, Fredesvinda Granda, Maria Edita Cordova, Maria Emita Garcia, and Felipa Medina, assisted by a cooperative who are aimed at supporting women in the industry, and processed at the on-site wet mill facility.

The anaerobic processing has lent a more intense, deeper fruit note to the cup, underpinning a medium tangy acidity. We’re excited to offer this more layered, complex approach from the origin and we can’t wait to see what Peru has to offer in future seasons.

          

Whole bean orders are roasted on Mondays and Thursdays. Orders placed before 9am are entered into the roasting queue for that day.
